Mummy Bars



Isn't this mummy candy bar wrapper cute? I found the idea on Skip to my Lou & I printed the sticker for the back from Living Locurto.  Brett's taking this one to his teacher tomorrow.

Butterscotch Haystacks


Ingredients:
  • 1 2/3 cups (11-oz. pkg.) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels
  • 3/4 cup creamy peanut butter
  • 1 can (8.5 oz.) or 2 cans (5 oz. each) chow mein noodles
  • 3 1/2 cups miniature marshmallows
Directions:
  1. LINE trays with wax paper.
  2. MICROWAVE morsels in large, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR.
  3. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted.
  4. Stir in peanut butter until well blended.
  5. Add chow mein noodles and marshmallows; toss until all ingredients are coated.
  6. Drop by rounded tablespoon onto prepared trays.
  7. Refrigerate until ready to serve.

Pumpkin Muffins

I made these with trying to use up the leftover pumpkin.  These look pretty good but I haven't tasted them yet. I'll let the day care parents tell me how they are tomorrow.  I also made two loaves of banana bread - it's BFast2Go for parents tomorrow morning. 
No more baking for me for a while!

Southern Biscuits

These were good with our beef barley soup tonight. Easy & quick to make.



Southern Biscuits

Ingredients
2 cups flour
4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons butter
2 tablespoons shortening
1 cup buttermilk, chilled
Directions
Preheat oven to 450 degrees.
In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.)
Bake until biscuits are tall and light gold on top, 15 to 20 minutes.
